From Judy: This is one of my husband's favorite pies. He's not much of a dessert eater, but when it's a special occasion, I make him a Coconut Buttermilk Pie. My nephew, Ed, also, loves this one. Maybe you'll find someone who will call this their special pie too.
Coconut Buttermilk Pie
Coconut Buttermilk Pie
1 ¼ cups sugar
3 Tbs flour
2 eggs
¼ tsp salt
½ cup buttermilk
⅓ tsp vanilla
⅔ stick margarine, melted
½ tsp butter extract
1 uncooked pie crust
⅔ cup coconut
Preheat oven to 350°F. Blend sugar, flour, eggs, and salt. Add buttermilk, vanilla, butter extract, and melted margarine. Mix and pour into pie shell. Sprinkle coconut on top and bake for about 40 minutes. Pie is done when knife inserted in center comes out clean.
