Baked Corn
6 ears fresh corn
1 tsp salt
½ cup milk
1 tsp sugar or sugar substitute
½ cup butter or margarine
2 Tbs all purpose flour
1 small onion, chopped
1 bell pepper, chopped
Preheat oven to 350°F. Cut whole kernels from cob. Scrape with the back of knife to get "milk" from cob. Mix all ingredients with the corn and put in heavy iron skillet. Bake in oven for 45 minutes to 1 hour, stirring several times while cooking.
